Elderberry Punch Jello
I don’t know about you, but it seems my kids and I have been getting hit extra hard with colds and illness this season. After the lockdowns and staying shut in mostly for about year, it’s no wonder our immune systems took a toll, as we weren’t exposed to the same viruses as we usually are during the fall. Our bodies got accustomed to relatively sterile environments, which did not help our immune system’s resilience.
When my kids get sick, I usually start out by giving them Elderberry Punch Tea with raw honey, as I’ve found that this is a really powerful way to boost their immune system’s response and help speed up recovery of illness. This tangy fruity blend is loaded with vitamins C & A, antioxidants, and flavonoids to protect our cells from damage. It also helps defend the immune system against illness such as colds or flus, assists in shortening the duration of sickness, and aids in reducing fevers. Elderberry is also an immunomodulator, which means that it is an herb that can be taken over time to help strengthen the immune system.
One day I had a thought- that I should try to make a jello out of the tea, as a yummy, healthy and easy treat for them to grab throughout the day when we’re stuck at home and sick. I went to the kitchen and started experimenting!
Below you will find the recipe for Elderberry Punch Jello, a favorite for kids and adults alike!
If you’d like to try this recipe, you can purchase my Elderberry Punch Tea here. If you don’t have this tea, you can also use an elderberry decoction instead by simmering elderberries in water. Either way, to make the decoction, place 3-4 tablespoons of tea or dried elderberries in 3.5 cups of water. Simmer, for 20 minutes and strain.
Ingredients
3 cups of Elderberry Punch Tea (liquid), strained and warm
1 cup of pulp-free orange juice
½ cup + 2 tbsp of raw honey
3 tbsp powdered gelatin
Pinch of vanilla powder (optional)
½ cup of cool water
Method
1. In a large pot, combine the elderberry punch tea, orange juice, honey and vanilla. Whisk together to combine.
2. In a separate bowl, whisk together the cool water and gelatin fairly quickly so it doesn’t clump. Make sure you whisk it really well so there are no granules left.
3. Add the gelatin mixture to the pot with the tea, orange juice, honey and vanilla, and whisk well to combine.
4. Pour into small cups or bowls and refrigerate for 6-8 hours.
